We’re Ramen TOKI Nihonbashi, a small ramen shop with just eight seats,
located near Kodemmachō Station on the Hibiya Line.
We opened in 2023, and though it’s only been a little over a year,
we’ve been warmly welcomed by the local community.
To all our regular customers and visitors from around the world —
we want to express our deepest gratitude.
Thanks to the kind support of our neighboring stores,
we were fortunate to achieve one of our goals:
being featured on TV.

Made with carefully selected salt and white soy sauce,
then blended with several kinds of vinegar
and citrus to create Toki’s original shio tare

The soup has layers of flavor without being heavy,
balancing subtlety and depth
— crafted with the finesse of a traditional Japanese restaurant.
Built on a blend of heated and unheated soy sauces,
our fragrant shoyu tare is enriched with several types
of liqueurs and aged black mirin.
For those who love a bold, distinctive umami and
enjoy layered flavors that unfold in three stages on the palate
— this is the one.
Rich in aroma and depth, it’s a shoyu ramen with
a presence that goes far beyond the ordinary.
Our signature soup is crafted from a carefully balanced blend
of premium dried fish, chicken, and pork,
slowly simmered to draw out a deep and refined umami.
To preserve its crystal-clear appearance,
each ingredient is handled with delicate care
—stirred gently to avoid clouding the broth.
The result is a surprisingly rich and complex base,
far beyond what its clarity would suggest.
Our signature chashu is made from carefully selected
Japanese pork belly,
marinated with a blend of aromatic vegetables and fruits,
then slow-cooked using our original method to bring out
its tenderness and depth of flavor.
We intentionally use pork belly so that
its rich essence gradually melts into the soup as you eat
—allowing you to enjoy the evolving flavor of the broth,
twice in one bowl.
Our special Toki-style shrimp and shiso wonton is
made with a blend of pork, chicken, and shrimp,
seasoned with refreshing Japanese shiso for a bright aroma.
Each wonton is wrapped with large, juicy pieces of shrimp
left intentionally whole to preserve their texture.
Thanks to a special preparation method, there’s no fishy odor
—just a clean, delicate flavor
that perfectly complements the ramen broth.
